HUMMINGBIRD BAKERY'S "SNICKERS CHEESECAKE PIE" (MATTYB RECOMMENDS)



Ive never really been a fan of Snickers (or Marathons if your really old school). Not sure why, think there were more appetising chocolate treats out there. So i was surprised that when I saw this recipe for what is essentially a giant snickers pie by the Hummingbird Bakery that i was instantly enamoured. I had to try it. I wasn't sure i would like it but myself and everyone who tried it had nothing but "umms" and "aaahs" to say about it.
 Basically its a peanut butter cheesecake pie. But that really doesn't do it justice. Let me talk you through it:

 There is a biscuit base of crushed digestives and Oreos. I was sold already!

Then you chop up snickers (fun size work best) and scatter them across the base. Again, amazing!

Then you pour your peanut butter and cream cheese over the top and bake. The smell when you take it out the oven is immense.
 
Once cool (should be overnight for best but a couple of hours will suffice), make a chocolate ganache. They say dribble it over in an arty pollocky kinda way but i say screw that! Spread a whole layer of chocolate over the top. Anyone worrying about the calories at this point clearly has something wrong with them!

The final flourish is a scattering of salted peanuts over the chocolate. I'm not fancy, just lash them over so you get that nice nutty crunchy texture with every bite. Leave to cool again and you have the ultimate homage to this classic chocolate bar. I'm now officially a Snickers convert!
