I've dabbled in baking bread in the past but I still get very scared as it can go horribly wrong if you mess with the yeast or don't work the dough properly. Not the case with this tear and share loaf which was totes delicious. These fluffy little buns connected together like a bee hive have a hint of parsley running through the crumb as well as a burst of garlic which is added both in the dough and brushed on top with some butter. Finish with poppy seeds for crunch and you have the perfect set of buns for sharing at dinner time!

MATTY'S FABULOUS MINTY FALAFEL
I have tried to make falafel's in the past but they always turned into a big mushy mess. I just never seemed to be able to get the consistency of the uncooked chickpea based mixture right so they just dissolved as soon as they hit the pan. Not so with the minty falafels I've managed to perfect here, they were spot on! Made with carrot, onion, cumin and mint, they are absolutely delightful and (if you have a food processor!) they are super simple to make. So much so you'll be whipping these middle eastern bad boys up all the time!

OOZY MELTY CHEESY CENTRE BEEF BURGERS
Cooking lots of vegetarian food in our house means that I don't often get the chance to make proper meaty treats. However, last weekend when presented with some mince on a brilliantly hot summers day, I decided to have a go at making my own burgers. Me being me though I had to add my own twist to them so I decided to hide a blob of mozzarella in the centre of the patties so that once they were fried and you bit into them, there would be a marvelous melty oozy centre to them. Let me tell you; they were brilliant!

STAR CINNAMON SINGAPORE (MATTYB RECOMMENDS)
I wouldn't normally recommend food which you can pick up in a food court
but then again I had never been to Star Cinnamon until recently. We
stumbled across Star Cinnamon in the basement of the Bugis Junction shopping centre on our way home from
visiting the Gardens By The Bay in Singapore and we couldn't help but be
enticed by the wonderful cinnamon buns on display. We just had to try
some so we stood and began to make our selections. What a hard choice this was going to be!Wednesday, 17 May 2017
WARUNG KAMPUNG BALI (MATTYB RECOMMENDS)
One of the first things I love to do when I arrive in a new holiday destination and I've checked into the hotel is to get on my phone and use my GPS to find all the restaurants nearby. There could be some hidden treasures around that you wont find in any guide book or travel guide. That is how I found out about Warung Kampung. A warung is the name for a small family run cafe/restaurant and this little eatery was just around the corner from our hotel. It was getting some nice little reviews on the internet so one night I decided to take a walk and see if I could get myself some good authentic Balinese grub.

"SWEET AS" CORN AND PEA FRITTERS
I love using frozen peas and sweetcorn at dinner time. They taste great and only take a few minutes to cook. One thing that I'm always looking for is new ways to serve up vegetables to make them a bit more interesting and so one weekend I decided to jazz up some frozen peas and sweetcorn by mixing them together in egg based mixture with some fresh spring onion and spicy cayenne pepper. I was surprised at how simple it was to transform them into something incredibly delicious.

REFUGE MANCHESTER (MATTYB RECOMMENDS)
It's funny how you can walk past somewhere fairly regularly and not even notice it's there. When we travel up to Manchester for concerts and theatre visits we often get off at Oxford Road and we'd never noticed Refuge before. We spied this offshoot of "Volta", a successful Manchester restaurant by chefs Justin Crawford and Luke Cowdrey (also know as the Unabombers - according to their website anyway!) online when planning a birthday meal in the city and we loved the sound of the menu so we decided to give them a try. Off we popped on the train to Manchester once more ready for a delicious celebration meal.Saturday, 1 April 2017
MINI EGG EASTER BROWNIES
Last year I made a delicious Easter Eggstravaganza Cake that was one of the highlights of my baking year. This year I wanted to celebrate Easter with a new bake and so, ready for the holidays here are my Mini Egg Easter Brownies! A gorgeously gooey, sticky and fudgy brownies with oodles of Cadburys Mini Eggs and Mini Creme Eggs baked into them to basically create a brownie that is perfect for anyone who can't wait to dig into the Easter Eggs on Easter Sunday. It's soooo naughty but oh so nice!

CRACKIN' CORNFLAKE CRUSTED MOZZARELLA STICKS
Oh, I do love a good mozzarella stick! Biting through that crispy breadcrumb coating and letting that stringy cheese just dribble all over your chin? Yup, it's totally messy, dirty and wrong but I bet there are a lot of people out there reading this agreeing me right now. One question? How can you make mozzarella sticks even better? Simple! Make your own home made versions and use crushed cornflakes mixed with panko breadcrumbs, garlic and onion powder to make the most delicious, crispy coating ever!

TERRIFIC TURKISH EGGS
Now this dish was a bit of a revelation. Its popped up a few times recently in magazines, books and the internet as a new idea for serving eggs at breakfast time. It might seem a bit strange to be called Turkish eggs when it uses Greek yogurt but I don't really care. All I care about is knowing that yogurt, eggs, garlic, herbs and chili oil can all work together to create a brilliant breakfast (or lunch!) time dish that I'll be honest, I was hesitant to try but can now confirm is delicious. Who'd of thought it eh?Saturday, 8 October 2016
THE RETURN OF THE CLASSIC LEMON TART
A simple classic can sometimes be as great as any over the top baking showstopper. Call it a "Tarte Au Citron" if you want to make it sound fancy but really all you have here a cracking perfectly baked shortcrust filled with a zesty lemon custard. Not only is it tasty and delicious but everyone is going to think that you are amazing when you tell them you made it from scratch. "JUST LIKE THE CHIPPY" SWEETCORN SOUP
If I go to any Chinese restaurant or down to the chippy and I'm looking for a soup as a starter there is only one option; chicken and sweetcorn soup. It such a unique soup to the cuisine and one that I had never tried to recreate at home. That was until this week when I gave this meat free version a whirl and I was so surprised at how quick and simple it was to create this classic dish. What's even better is that its tastes so much fresher than the potentially MSG laden versions you can find in more dodgy food outlets.Wednesday, 20 July 2016
TASTY THAI CRAB CAKES
My Thai butter bean patties were a right little tasty treat. Not only are they super delicious but they are also super versatile. So much so that with a few little tweaks I transformed them into some Thai fish cakes. I've still kept the butter beans in them, they work really well with the shredded crab meat and mashed potatoes. Add in the rest of your ingredients including a smidge of lemon, rice wine vinegar, fresh herbs and a glug of fish sauce to really ramp up the eastern vibe. Be prepared to get your hands on some crackin' crab cakes.

TASTY THAI BUTTER BEAN PATTIES
When it comes to Thai food in the UK you can often get lumbered with red and green curries. As nice as they are, it's nice to try something different sometimes. When I whipped up these butter bean patties I wasn't expecting them to be Thai inspired but on first bite, those flavors of lemon, coriander, chili and sesame all work together to give them a distinctive taste of the east. The great thing about them is that other than boiling some potatoes, all you really need to do is chuck everything in a bowl and mix together and then roll the mixture of polenta for some added crunch. Simples!Saturday, 9 July 2016
PER TUTTI MANCHESTER (MATTYB RECOMMENDS)
I'm up in Manchester a lot for concerts and gigs and normally I have an idea about where I'm going to eat before each visit. This week however I traveled up sans schedule and stumbled across Per Tutti as I got off the train at Deansgate. I didn't know anything about the place or what I was in for so with zero expectations I headed through the door ready for some food.

QUORN SAUSAGE, BACON AND EGG "MAT"MUFFIN
Having cooked vegetarian food regularly for at least ten years now it's always great when I see a new meat substitute product come onto the market. Quorn's latest offering is a sausage patty that instantly reminded me the type you get in a certain fast food chains breakfast muffins. I couldn't wait to try and recreate them using this exciting new product alongside the already popular veggie bacon strips and the humble egg. Cook them and pop them all on a toasted muffin and you have a scrummy vegetarian breakfast treat

NEON JAMON LIVERPOOL CITY CENTRE (MATTYB RECOMMENDS)
If there are two things that go well together its Tapas and a warm sunny day. Last week in Liverpool as the sun continued to shine over the city, I headed up to Neon Jamon on Berry St with a friend to take advantage of the glorious weather and pretend that I was outside a small cafe on the Mediterranean coast enjoying fine wine and great food. Having opened their new site just over six months ago, had Neon Jamon managed to transfer that taste of Catalonia from it's Smithdown Place branch near Penny Lane to the bustling streets of Liverpool's vibrant, multicultural city centre?Saturday, 7 May 2016
THE SWAN BANKSIDE (MATTY B RECOMMENDS)
I couldn't think of any better way for a foodie to commemorate the 400th anniversary of Shakespeare's death then having a spot of lunch at The Swan on London's Bankside. Practically attached to the famous Shakespeare's Globe theatre, this bar/restaurant caught our eye as we strolled along the length of the Thames last week with it's tasty looking menu proudly on display by the main entrance. That night when we got back to our hotel we booked a table for two at 2pm the next day. Would the food taste as good as it sounded in writing? I couldn't wait to find out!Firstly, points for The Swan's team calling us two hours before to confirm our reservation. A lot of places rely solely on online bookings nowadays so it was great to get a bit of human acknowledgement of our booking. When we arrived at The Swan on a sunny bank holiday Monday afternoon we were greeted with warm smiles and taken straight up to our table even though we had arrived early. It looked like nothing was going to be a problem for this friendly team.
The dining area upstairs is a absolute delight! The whole far side of this area is practically window offering gorgeous panoramic views of the Thames, St Paul's cathedral and other famous landmarks and on a gorgeous day like this one it was a stunning sight. The windows give the whole dining room a great sense of space and light pours into the room making it so warm and inviting. The decor had modern elements such as the exposed bulb lighting whilst wooden elements to the furniture and in the flooring hark back to Tudor design. Both styles meld together very seamlessly without being gimmicky.
We had decided on having a spot of lunch today washed down with a refreshing glass of cloudy lemonade but it appeared a lot of the other diners had come for the popular "Midsummer's Night Dream" afternoon tea. It looked a treat; three tiers of delicate sandwiches, scones and a top tier of some gorgeous little cakes and shot glasses of some moussey looking things washed down with pots of loose leaf tea, prosecco or a "love potion". The tea is served in some beautiful looking Midsummer's Night Dream tea sets which I'd quite like to own myself. I've got my eye on this for the next time we visit.
I suppose by saying there will be a next time I've given away that I'd like to come back. Well, it's hard for me to disguise this fact as the food was stunning. Our first starter was the tomato gazpacho which was delicious. A fabulous cold soup perfect for a warm day like today. You could taste the freshness of the tomatoes in every drop. Add to it some pesto, a drizzle of oil and crunchy croutons and you'll find it difficult not too scoop up every last drop and you'll find it difficult not to scoop up every last drop with the freshly cut bread served up from the centre of the dining room.
Our other starter was also fitting for a spring afternoon, a fried duck egg served surrounded by a delicate arrangement of broad beans, spring onion, pea shoots and sliced baby radishes and finished with a drizzle of oil. Not only was the plate visually outstanding (so much that I didn't want to touch it, it was so beautiful) but once you cut into that vibrant yellow yolk and allow the golden insides to ooze out all over the tender veg then the dish really comes alive. Loved the little crispy bits of egg white too, just how I like a fried egg! It was that good I didn't want it too end!
Our other main was another vegetarian stunner of roast halloumi, English asparagus and Jersey royals. Love a Jersey royal and these bad boys were so buttery and soft. The asparagus was tender with a bit of a bite too them and the halloumi was perfectly cooked and minus the squeak that dodgy halloumi can have. Large circular pieces of charred onions added another layer of flavor to the dish alongside the "mystery" sauce. The sauce isn't highlighted on the menu so we had no idea what was in it but it was fabulous and I'd love to know what it was. As well as tasting stunning, it is also a right looker on the plate. Perfection all round.
Did we go on for pudding? With food this good it would of been rude not too! First off the block was an old favorite of ours, the bakewell tart. I love baking a bakewell tart but I love eating them more and this version did not disappoint. The pastry was crisp and buttery and topped with a layer of fruity jam. The frangipagne body of the tart was soft and moist and melted in the mouth. Served alongside it was a spoon of Devon cream that took me right back to childhood memories of holidays in the south west with it's intense creamy smoothness. The definition of a Great British bake on a plate. Finally, along came this lemon and almond cake served with pistachio ice cream and lemon curd. Kind of a "textures of lemon" dish in a way. The slices of lemon set on top of the cake were super sour and very sherbet like. The cake was so moist it practically oozed lemon as my spoon glided through it. The pistachio ice cream was smooth and creamy whilst the little nibs of nut and biscuit crumb give the plate another texture to explore. I thought they were a bit stingy with the curd but once I tasted it I understood why. The little blobs practically punched you in the face with their intense flavor. For lemon lovers this is paradise on a plate.
What an amazing lunch this was. I was more than happy to pay the bill which came sat inside a book of Shakespeare's Troilus and Cressida. Such a cute way to add a final piece of theatre to the meal. I can't recommend The Swan enough. The literary history mixed with the stunning views and location, warm and friendly staff together with the fabulously presented traditional dishes all combine together to create a dining experience that the Bard would be proud of. Whether your coming for afternoon tea, lunch or dinner you will leave with a full belly and a big smile on your face. To go or not to go? The answer is most definitely a resounding YES!

EASTER EGGSTRAVAGANZA CAKE
Firstly, let me apologize for the terrible Easter pun but it had to be done. Secondly, let me introduce you to this slab of chocolate heaven. If you love creme and mini eggs then this is the Easter cake for you! What you have here is a recipe for the most deliciously fudgey chocolate cake which has oodles of creme egg halves and mini eggs baked inside it. If that doesn't sound good enough as it is, the cake is then slathered in chocolate icing and decorated with (Yup, you guessed it.) more creme egg halves and mini eggs. Eggs-cellent (Soz!).

"NOT AS GOOD AS NANS" CHEESE AND ONION TART
My Nan is my number one food inspiration. She had some classic dishes in her repertoire from her "Pea Wack" to her coleslaw. It's this recipes that take me right back to when I was young, helping her out in the kitchen and then eating her fabulous creations. One of my favorites of her's was her cheese and onion tart which I've tried to recreate it in her honor. Its obviously not as good as hers but the nostalgia it conjures up is worth making it for alone! If you love a good quiche, and you love the flavors of cheese and onion this is the perfect bake for you!
