ONE SHOT SUNDAY ROAST ("TASTE OF THE MED" STYLE)



Another One Shot Sunday Roast now and this one comes inspired from some left over halloumi I had in my fridge from a BBQ we had during our week away in Wales. Using the halloumi as a base, I pooled together other ingredients I had in my cupboards; cannelloni beans, red peppers, tomatoes and basil to create a roast that is a great reminder of holidays around the Mediterranean islands. Throw in some potatoes and you once again have a Sunday roast ready to delight friends and family a-like.

One Shot Sunday Roast (Taste Of The Med Style)


2 Large Jacket Potatoes (Cut Into Quarters)
Good Glug Olive Oil
Juice Of Half Lemon
8 Basil Leaves
2 Large Onions (Peeled And Halved)
8 Cherry Tomatoes (Halved)
250g Block Halloumi
2 Roasted Red Peppers
400g Drained Tin Cannelloni Beans
Salt And Pepper To Season


  1. Place your potatoes into a pan of salted boiling water and bring back to the boil for around five minutes. Drain the potatoes and leave to one side. Turn your oven on to 200 degrees (180 fan) whilst you prepare the roasting tray.
  2. Line a deep sided roasting tray with foil and add in a glug of olive so that a thin layer covers the base of the tray. Squirt in the juice of the lemon, add in the basil and onions and give everything a good mix together.
  3. Throw in the cherry tomatoes and then cut the halloumi intocubes and the peppers into strips roughly the same size of the tomatoes. Add them to the tray and mix again to coat everything in the lemony oil.
  4. Finally, tip in the cannelloni beans and the potatoes and once again coat in the lemony oil. Season with salt and pepper and place in the oven for around 30-35 minutes giving everything a good stir halfway through to ensure the halloumi cooks evenly.
Your roast is ready as soon as you can slide a knife right through your potatoes. Drain all the juices from the tray and keep them for making gravy and serve with the protein of your choice if you wish or for the veggies out there a big plate full on it's own with the beautifully roasted halloumi is a great Sunday roast alternative from the normal nut roasts that can get a bit boring after a while. How ever you serve this one shot I'm sure you find the fresh and herby flavours an absolute treat and another Sunday roast flavor sensation under your belt!.
