TOTALLY TROPICAL OATY BARS



Oat and cereal bars have really taken off in the UK over recent years. Supermarket shelved are now packed with an array of different brands and varieties but they can sometimes be a bit pricey especially if you are trying to be good. This is where my Totally Tropical Oaty Bars come in. Packed full of pineapple flavored amazingness these bars are easy to rustle up in large family sized batches and even better, they are mega tasty. You will never want to fork out for shop bought versions ever again.


Whats great about this recipe is that if your not a fan of pineapple, you can tinker it to make the bars any flavor that you wish. Simply swap out the pineapple pieces for another dried fruit of your choice and use a complimentary extract flavor (although vanilla kind of works with everything!) and there you have it, tailor made oat bars to suit anyone. The almonds add a bit of crunch to the top of your bars but if you don't have any, don't like them or are allergic then you can leave them off. No biggy!

Here's that flexible recipe for you. This should make about 24 oaty bars for you, should be another to go around most hungry hoards:

Tropical Oaty Bars

 200g Self Raising Flour
200g Oats
200g Light Muscavado Sugar
200g Finely Chopped Dried Pineapple
200g Melted Butter
1 Tbsp Golden Syrup
1 Beaten Whole Egg
1 Tsp Pineapple Extract
2 Handfull Flaked Almonds



  1. Turn your oven straight on to 180 degrees (160 fan) and line the base of a large shallow rectangular baking tray with baking paper.
  2. In a large bowl mix together the flour, oats, sugar and pineapple until combined before adding in the butter, syrup, egg and pineapple extract. Stir again until well combined.
  3. Pour the mixture out onto the baking tray and spread the mixture out into a thin even layer, pressing down slightly to ensure the mix is bound together. 
  4. Sprinkle over the almonds and then place in the oven and bake for 20-25 minutes. Remove from the oven and allow the bars to cool so that they firm up.
Once the bars are cool cut them up into around 24 portions and place them into your biscuit jar. You now have a delicious grab and go snack that is super tasty and a lot better for you then any processed shop bought treat. What with being packed with oats these bars make the perfect energy boost in the morning if your in a rush and those little fleckles of pineapple throughout the bars give them a proper flavorful boost which takes the up a notch from your boring old oat bar or biscuit. Just make sure you put a lock on that biscuit tin or you might find it empty before you have even had a look in. That's the tempting taste of the tropics for you!
