CHETNA'S "DRINK ME" SPICED CHAI LATTE CAKE



This months Flavourly box was delivered to my door and it was one of the best yet. One of the many treats in there was a tub of "Drink Me" Spice Chai Latte powder along with this fantastic recipe from GBBO contestant Chetna Makan for using your powder to create this delicious cake. The mixed spices in the Chai Latte powder are wonderful and give this cake a beautiful sweet flavor. I would describe it as cinnamon on steroids! Jon described it as one of the best tasting I'd ever made so I knew I had to share the recipe with you!


Now normally with my recipes I start talking about how you can change things up to suit your tastes. However this is not my recipe so I won't be doing that today. This is more of an encouragement for you to get online to buy or hunt out your nearest stockists of "Drink Me" Spiced Latte powder so that you can give this bake a go and enjoy it was much I we have here at MattyB Bakes Towers!


 Maybe you could give one of their other Chai Latte powders a go in a bake and see what creations you can come up with. There is a vanilla version which I think will be great in cupcake frosting and a chocolate one that will really give some oomph to your brownies. Give their website a little look and see what takes your fancy and gets your creative juices flowing.


I mentioned them above as well but I would to say that I wouldn't of even of come across "Drink Me" if it wasn't for Flavourly. I saw them on Dragon's Den earlier in the year and thought I would give them a try. I've had three boxes so far and each moth its getting better and better and you'll see more of the goods I've been sent used in recipes shortly.  OK, so I've changed some of the recipe but not too dramatically. I have used pecans instead of hazelnuts as I prefer the softer texture that they have and for the topping I used the remainder of my Whole Plus lemon pie topper leftover from my Flavourly box that I used  on my Dinky Limoncello and Raspberry mini cakes. Check out their website and get yourself a few tubs of any of the range of delicious toppers they have on offer. A simple way to create a tasty topping to cakes and muffins.


Here comes the recipe! Get your "Drink Me" powder in and give Chetna's  stunning cake a go immediately!

Chetna's "Drink Me" Spiced Chai Latte Cake

 For The Cake

180g Unsalted Softened Butter
180g Golden Caster Sugar
180g Self Raising Flour
50g Ground Almonds
1/2 Tsp Baking Powder
3 Large Eggs
3 Tbsp Milk
3 Tbsp Drink Me Spiced Chai Latte Powder
2 Tbsp Water
2 Tbsp Chopped Pecans

For The Icing


80g Unsalted Softened Butter
250g Icing Sugar
1 Tbsp Drink Me Spiced Chai Latte Powder
2 Tbsp Milk
2 Tbsp Chopped Pecans
3 Tbsp Lemon Pie Topper

  1. Turn your oven on to 180 degrees (160 fan) and grease and line two 8 inch round cake tins with grease proof paper.
  2. In a large bowl, beat together the butter and sugar until light and fluffy whilst in a separate bowl mix together the flour, almonds and baking powder until well combined.
  3. Crack in one egg followed by a spoon of the flour mix and beat until well combined. Repeat with the other eggs and then add in the rest of the flour mixture and mix until you see nowstreaks of flour in the batter.
  4. In a small cup mix together the Chai latte powder with the water. and add to the cake batter with the milk. Whisk everything together for 1-2 two minutes before adding in the the pecans and folding them through until combined.
  5. Pour the mixture equally into the 2 tins and bake for 25-30 minutes until golden brown and an inserted skewer comes out clean. Remove from the oven and leave to cool for ten minutes before removing from the tins and leaving to fullycool on a wire rack.
  6. For the frosting, whisk together the butter and icing sugar until light and fluffy before adding in the Chai latte powder and the milk. Whisk until well combined and a light and fluffy frosting has formed.
  7. Once cool, place one cake on a cake stand and spread half the icing on top of it. Sprinkle the chopped pecans over it and place the other cake on top. Spread the remaining icing over it and sprinkle the lemon pie topper over the cake to finish.



Place the cake in the fridge to allow the frosting to firm up slightly and then when you are ready to serve, remove from the fridge and cut yourself a big slab to go along side a big piping hot mug of tea. That beautiful mixed spice flavor from the powder is delicious in the sponge and the pecans and topping give the cake crunch that really jazzes up the texture and turning it into something truly special.
Do yourself a favor and go buy yourself a tub of "Drink Me" and let Chetna's cake do the talking. It'll be screaming "Eat Me" to you and you'll do as your told I'll tell you!
