MATTYB'S BANANA BREAD BONANZA PART 2: CHOCOLATE CHIP



So what happens if you look at my boozy fruit and nut banana bread and decide that's not the one for you. Well how does a banana bread littered with chocolate chips grab you? This version of my banana bread is even quicker as you don't have to worry about soaking  sultanas or chopping nuts. You simply chuck in your chocolate chips in at the end, bake and in under an hour you can have an amazing chocolate banana bread on your table ready for your next pot of tea! Magic! Now the quality of the chocolate chips you use does equate to the quality of the bread. You can lash in some cheap milk chocolate chips if you want but I find that dark chocolate chips of around 85% cocoa gives the chocolate enough oomph to be heard over the banana flavor. 

Feel free to use white chocolate chips as well if you're that way inclined or you can use chocolate covered fruit to add a bit of extra flavor and texture into the bread. The recipe below will once again make enough for two 1lb loaves, one to tuck straight into and one too freeze for later;

Chocolate Chip Banana Bread

200g Mashed Banana
2 Tbsp Semi Skimmed Milk
100g Softened Butter
150g Plain Flour
150g Golden Caster Sugar
1 Tsp Bicarbonate of Soda
1 Tsp Baking Powder
2 Whole Eggs
100g Dark Chocolate Chips
  1. Start by getting your oven toasty warm to 180 degrees (160 fan) and grease and line two 1lb loaf tins.
  2. Chuck the banana, milk, butter, flour, sugar, bicarb, baking powder and eggs into a large bowl and give everything a good beat until smooth and well combined. Add in the chocolate chips and fold through until just evenly distributed.
  3. Divide the mixture between the two prepared loaf tins and place in the centre of your oven to bake for 40-45 minutes until golden brown and an inserted skewer comes out clean.
Remove the loaves from the oven and if you like you can sieve some cocoa powder over the top for a final little flourish. Leave the loaves to cool for a bit in the tin before transferring to a wire rack to cool completely. Once cool it's time to tuck in. With this loaf you will get that soft banana bread surrounding little globules of chocolate which will melt in your mouth. If that doesn't tickle your fancy then you either don't like chocolate, cake or there is something wrong with you. Remember to freeze the second loaf if you have enough self restraint not to eat both loaves at once. When they taste this good, I wouldn't blame you if you did!
