MATTY'S CHILI AND MINT HALLOUMI KEBABS



Sometimes it's hard to come up with tasty things to do with veggie products. I think I over think things now and then tho, sometimes the simplest creations can be the most tasty. Take these chili and mint kebabs for instance. All you need to do is marinate some Halloumi and veg for an hour, skewer and grill and voila! What's even better is that it's a great way to again use up those odds and ends of veg in your kitchen. The veg below is a suggestion based on flavours and textures I enjoy but feel free to swap or add veg in for what you have or enjoy.

A little tip too folks! If you are using wooden kebab skewers then soak them in some cold water whilst you marinate the veg. This will reduce the amount of burn on the skewers when placed under the grill. Simple but effective.

Great for an easy prep meal tonight or why not prepare in advance for the next day. Either way this simple little recipe will give you roughly ten delicious kebabs to nosh on:

  Chili And Mint Halloumi Kebabs

200g Halloumi
12 Mushrooms
3 Peppers (Colours Of Your Choice)
10 Cherry Tomatoes
2 Tbsp Dried Mint
2 Finely Chopped Red Chili's
 2 Tbsp Lemon Juice
Good Glug Of Chili Oil
Salt And Pepper To Season



  1. Cut the halloumi into 2cm cubes and throw into a large bowl. Then take the mushrooms and peppers and chop them into similar sized pieces as the halloumi and add them to the bowl along with the whole cherry tomatoes. 
  2. Add in the mint, chili and lemon juice to the bowl and mix together. Add in the chili oil a smidge at a time, mixing as you go until there is light oily coating over all the contents of the bowl. Season with salt and pepper and leave to marinate for at least at hour.
  3. Take your skewers and pierce the marinated halloumi and veg however you see fit (they don't need to be identical) and arrange the kebabs on a baking tray lined with grease proof paper.
  4. Drizzle the kebabs with some more oil and place under a high heat grill for around 15 minutes, turning the kebabs half way through until the halloumi turns golden brown all over.


Serve straight from the grill and get stuck in with your hands. I forgot to mention its a great recipe for lessening your washing up too! If you do want to bumf up your meal serve with some spicy rice - the perfect compliment for these chilified bad boys.

This is no 2am drunk chippy kebab. These be little sticks of pure Halloumi heaven!
