POSH POTATO SALAD



Making a potato salad is a rather simple affair. Potatoes, mayo and some chopped herbs. Done! What you may not know is that by adding a few more ingredients you can really lift up this simple side dish into something really special. All you need is a red onion, caster sugar and red wine vinegar and there you have it! It's ever so fancy and everyone will think it's well posh but they won't know how quick and easy it was for you to make. Don't worry though. I won't tell anyone if you don't? 

Posh Potato Salad

400g Washed New Potatoes
1 Small Finely Diced Red Onion
2 Tbsp Red Wine Vinegar
2 Tbsp Mayonnaise
1 Tbsp Mixed Italian Herbs
1 Tbsp Golden Caster Sugar
Salt and Pepper To Season 





  1. Place the potatoes in a pan of salted boiling water and bring back to the boil for around 15 minutes until the potatoes are just cooked. They should be soft enough to glide a knife through but still be firm. 
  2. Whilst the potatoes are boiling, place the onion, vinegar, Mayonnaise, herbs and sugar in a bowl and give everything a good mix until a smooth dressing is formed. Season this with some salt and pepper. 
  3. Once the potatoes are boiled, drain and then leave them to cool until you can handle them. Chop each potato in half and chuck into a bowl big enough to hold them all. 
  4. Add the dressing a spoonful at a time, mixing after each addition until you have coated all the potatoes.


...And there you have it. Lovely and sweet it great to serve as a side for a salad or maybe even a slice of quiche. If you find it to too sweet then maybe try my chili mustard potato medley instead which packs a warmer punch. Either way you now have delectable potato salads to suit a variety of palettes.
