When we travel up to Manchester for concerts and theatre visits we often get off at Oxford Road and we'd never noticed Refuge before. We spied this offshoot of "Volta", a successful Manchester restaurant by chefs Justin Crawford and Luke Cowdrey (also know as the Unabombers - according to their website anyway!) online when planning a birthday meal in the city and we loved the sound of the menu so we decided to give them a try. Off we popped on the train to Manchester once more ready for a delicious celebration meal.

BISTRO FRANC LIVERPOOL (MATTYB RECOMMENDS)
Looking for a three course dinner in Liverpool priced at just £12.95? Not possible I hear you cry! Well let me take some time to introduce you to Bistro Franc on Hanover Street, Liverpool. This French restaurant has been operating in the city for a fair few years now and is famous for offering it's patrons a three course pre theatre menu for just that. Cheap? Yes, but is the food any good? With tickets to the Liverpool Empire theatre one evening last week to see the touring production of Rent and without wanting to spend an arm and a leg on dinner; it seemed like the perfect opportunity to try it and find out.

GINGER NUTTY KEY LIME PIE
I love any citrusy based desserts. That sharp kick really packs a punch and works so well with all different types of cakes and bakes. It's only natural then that every time I see a Key Lime pie it takes all my might not to jump over and stick my face in it! I'm no food historian so I don't know what's in a traditional Key Lime pie but I say who cares about the rules and just make what you enjoy to eat! That's why for me the best biscuit base to use on a Key Lime consists of crushed ginger nuts. Lime and ginger! A fabulous flavor combination.

MATTY B'S AMARETTO BAKEWELL TART
The time has come for me to update my recipe for my my signature bake! My Bakewell tart! This tart is one of the reasons I started writing this blog as people kept asking me for the recipe! It has the crumbliest almond flavored pastry, an Amaretto frangipagne and toasted almonds on top. The addition of the Amaretto adds a beautifully sharp boozy almond taste to the tart that makes it defiantly one for the grown ups.

MATTY'S HOMEMADE MINCE PIES
So you have made your homemade mincemeat and it's been brewing away for a while so now, in the last few days before Christmas it's time to make those mince pies. Obviously if you haven't made your own mince meat you can use a ready made variety but for me, making your own pastry, filling it with your own mince meat and baking them so that your kitchen is filled with those incredible festive smells is what Christmas is all about! MATTY'S MINCEMEAT IN A MINUTE
Mincemeat can be very dividing. A lot of people love it but I know a lot who can't stand the stuff. If there is anything that will ever convert people to the joys of mincemeat it will be this recipe! More fresh and fruity than the jarred varieties that are rushed out onto supermarket shelves at this time of year, it's another treat you can add to your Christmas repertoire. THE RETURN OF THE CLASSIC LEMON TART

MANDRAC LOPUD, CROATIA PART 1 (MATTYB RECOMMENDS)
So I've just returned from a week away sunning myself on the beautiful island of Lopud, just off the coast of Croatia. During this week of rest and relaxation I had some of the best food of my life including two meals at this little restaurant called Mandrac. Situated on the same stretch of seaside strip as our hotel we discovered this little beauty on our first day and enjoyed it so much we went back on our last day. Last week in Liverpool as the sun continued to shine over the city, I headed up to Neon Jamon on Berry St with a friend to take advantage of the glorious weather and pretend that I was outside a small cafe on the Mediterranean coast enjoying fine wine and great food. THE SWAN BANKSIDE (MATTY B RECOMMENDS)
I couldn't think of any better way for a foodie to commemorate the 400th anniversary of Shakespeare's death then having a spot of lunch at The Swan on London's Bankside. Practically attached to the famous Shakespeare's Globe theatre, this bar/restaurant caught our eye as we strolled along the length of the Thames last week with it's tasty looking menu proudly on display by the main entrance. That night when we got back to our hotel we booked a table for two at 2pm the next day. Would the food taste as good as it sounded in writing? I couldn't wait to find out!Firstly, points for The Swan's team calling us two hours before to confirm our reservation. A lot of places rely solely on online bookings nowadays so it was great to get a bit of human acknowledgement of our booking. When we arrived at The Swan on a sunny bank holiday Monday afternoon we were greeted with warm smiles and taken straight up to our table even though we had arrived early. It looked like nothing was going to be a problem for this friendly team.
The dining area upstairs is a absolute delight! The whole far side of this area is practically window offering gorgeous panoramic views of the Thames, St Paul's cathedral and other famous landmarks and on a gorgeous day like this one it was a stunning sight. The windows give the whole dining room a great sense of space and light pours into the room making it so warm and inviting. The decor had modern elements such as the exposed bulb lighting whilst wooden elements to the furniture and in the flooring hark back to Tudor design. Both styles meld together very seamlessly without being gimmicky.
We had decided on having a spot of lunch today washed down with a refreshing glass of cloudy lemonade but it appeared a lot of the other diners had come for the popular "Midsummer's Night Dream" afternoon tea. It looked a treat; three tiers of delicate sandwiches, scones and a top tier of some gorgeous little cakes and shot glasses of some moussey looking things washed down with pots of loose leaf tea, prosecco or a "love potion". The tea is served in some beautiful looking Midsummer's Night Dream tea sets which I'd quite like to own myself. I've got my eye on this for the next time we visit.
I suppose by saying there will be a next time I've given away that I'd like to come back. Well, it's hard for me to disguise this fact as the food was stunning. Our first starter was the tomato gazpacho which was delicious. A fabulous cold soup perfect for a warm day like today. You could taste the freshness of the tomatoes in every drop. Add to it some pesto, a drizzle of oil and crunchy croutons and you'll find it difficult not too scoop up every last drop and you'll find it difficult not to scoop up every last drop with the freshly cut bread served up from the centre of the dining room.
Our other starter was also fitting for a spring afternoon, a fried duck egg served surrounded by a delicate arrangement of broad beans, spring onion, pea shoots and sliced baby radishes and finished with a drizzle of oil. Not only was the plate visually outstanding (so much that I didn't want to touch it, it was so beautiful) but once you cut into that vibrant yellow yolk and allow the golden insides to ooze out all over the tender veg then the dish really comes alive. Loved the little crispy bits of egg white too, just how I like a fried egg! It was that good I didn't want it too end!
Our other main was another vegetarian stunner of roast halloumi, English asparagus and Jersey royals. Love a Jersey royal and these bad boys were so buttery and soft. The asparagus was tender with a bit of a bite too them and the halloumi was perfectly cooked and minus the squeak that dodgy halloumi can have. Large circular pieces of charred onions added another layer of flavor to the dish alongside the "mystery" sauce. The sauce isn't highlighted on the menu so we had no idea what was in it but it was fabulous and I'd love to know what it was. As well as tasting stunning, it is also a right looker on the plate. Perfection all round.
Did we go on for pudding? With food this good it would of been rude not too! First off the block was an old favorite of ours, the bakewell tart. I love baking a bakewell tart but I love eating them more and this version did not disappoint. The pastry was crisp and buttery and topped with a layer of fruity jam. The frangipagne body of the tart was soft and moist and melted in the mouth. Served alongside it was a spoon of Devon cream that took me right back to childhood memories of holidays in the south west with it's intense creamy smoothness. The definition of a Great British bake on a plate.Finally, along came this lemon and almond cake served with pistachio ice cream and lemon curd. Kind of a "textures of lemon" dish in a way. The slices of lemon set on top of the cake were super sour and very sherbet like. The cake was so moist it practically oozed lemon as my spoon glided through it. The pistachio ice cream was smooth and creamy whilst the little nibs of nut and biscuit crumb give the plate another texture to explore. I thought they were a bit stingy with the curd but once I tasted it I understood why. The little blobs practically punched you in the face with their intense flavor. For lemon lovers this is paradise on a plate.
What an amazing lunch this was. I was more than happy to pay the bill which came sat inside a book of Shakespeare's Troilus and Cressida. Such a cute way to add a final piece of theatre to the meal. I can't recommend The Swan enough. The literary history mixed with the stunning views and location, warm and friendly staff together with the fabulously presented traditional dishes all combine together to create a dining experience that the Bard would be proud of. Whether your coming for afternoon tea, lunch or dinner you will leave with a full belly and a big smile on your face. To go or not to go? The answer is most definitely a resounding YES!

"NOT AS GOOD AS NANS" CHEESE AND ONION TART
My Nan is my number one food inspiration. She had some classic dishes in her repertoire from her "Pea Wack" to her coleslaw. It's this recipes that take me right back to when I was young, helping her out in the kitchen and then eating her fabulous creations. One of my favorites of her's was her cheese and onion tart which I've tried to recreate it in her honor. Its obviously not as good as hers but the nostalgia it conjures up is worth making it for alone! If you love a good quiche, and you love the flavors of cheese and onion this is the perfect bake for you!

THERE'S NOWT LIKE AN EGG CUSTARD!
If you had to write a list of Great British baking classics, the egg custard will be up there on many peoples lists. Is there any better way to treat yourself on a dreary afternoon than popping into your local bakery and picking up a few egg custards to cheer yourself up? I know a lot of people in my family feel the same so I thought it was time to try and give this comfort food great the MattyB Bakes treatment. Pastry filled with egg custard and topped with nutmeg. Doesn't get much simpler but some times the simplest things in life are the best!

WIMBELDON "GRASSHOPPER" PIE
Nigella Lawson's Grassshopper pie is one of my most favorite things to make. That creamy, minty and most importantly boozy filling on a chocolate biscuit base is a dessert that is so easy to make and delicious in these warm summer evenings. With Wimbledon now in full swing I decided I to put my own spin on this classic dish by using a strawberry and cream liquor instead of the usual creme de menthe to create a pretty pink pie packed with those traditional Wimbledon flavors. Place it centre court on your dinner table and it's game, set and match.

HALLOWEEN "PUMPKA-PIE"
I had quite a bit of pumpkin left over from making my pumpkin spice muffins so I thought whilst I'm enjoying my new found fondness for those orange boulders that I'd give the classic pumpkin pie a whirl. Using my favourite sweet pastry recipe and topping with a layer of delicious dark chocolate this is more suited to serving as a pudding at a Halloween themed dinner party (or after Thanksgiving dinner if your one of my American chums!). It's defiantly a more grown up treat that you can enjoy whilst the little ones enjoy their candy hauls.

RED HOT QUICHE
You know when you wake up sometimes and just go "oooh I really fancy that for tea tonight". Well that's the feeling I got this morning and my craving was for a good homemade quiche. Sitting in my fridge was some cooking chorizo, roasted red peppers, red chili and cherry tomatoes. All beautifully glowing ruby ingredients that I thought would work amazingly together hence the birth of my "Red Hot Quiche". A spicy, smoky and sweet dish that was exactly what I wanted!

WHITE CHOCOLATE "KYLIE TARTLETS"
I prepared these cute little tartlets as dessert for a meal I made for a friend of mine who was staying over whilst we went to see Kylie open her tour in Liverpool this week. They are my little homage to Ms Minouge, tiny little tartlets (we all know good things come in small packages) filled with a luscious creamy white chocolate filling and I decorated the top with some pink sprinkles for that little camp flourish fit for any Kylie fan. The only real work comes in making the pastry, the filling is super simple to make but is delicious, perfect for any princess of pop!

CHEESIMATO TART
I love tarts! No don't be smutty, of course I mean a scrummy pastry base filled with a delicious filling. Of course I've made many a sweet tart like my famous bakewell tart but one of my favourite bakes has to be a cheesy tart. Now we all know about Lorraine and her quiche but it's not very original or veggie friendly. Here is my "Cheesimato" tart. Herby pastry lined with tomato chutney, filled with a cheese and onion savoury mix and topped with breadcrumbs and cherry tomatoes. Great for a summer meal!

LULLY LEMON AND RASPBERRY RIPPLE TARTLETS
I love using lemon in my baking. Hands down its my favourite dessert flavour. That beautiful sharp and zingy lemon taste is too die for. I also love making my own pastry. Crumbly and delicious homemade shortcrust is always miles ahead of shop bought. So I combined the two along with some fresh raspberries, raspberry jam and toasted almonds for these lully little lemon tartlets. The perfect way to round off any meal.

HUMMINGBIRD BAKERY'S "SNICKERS CHEESECAKE PIE" (MATTYB RECOMMENDS)
Ive never really been a fan of Snickers (or Marathons if your really old school). Not sure why, think there were more appetising chocolate treats out there. So i was surprised that when I saw this recipe for what is essentially a giant snickers pie by the Hummingbird Bakery that i was instantly enamoured. I had to try it. I wasn't sure i would like it but myself and everyone who tried it had nothing but "umms" and "aaahs" to say about it.
Basically its a peanut butter cheesecake pie. But that really doesn't do it justice. Let me talk you through it:

MA'AM'S WIMBLEDON TART
Its Wimbledon time and that calls for one thing. Strawberries and cream! There are many recipes for S+C based cakes on line but when I had to think of something to make for a chocolate lovers birthday today I thought chocolate tart with strawberries on top! Perfect.
Wheres the cream you may ask? Well not only is the filling essentially just a beautifully rich and smooth chocolate and double cream ganache but a nice dribble (or lashing!) of single cream makes the perfect accomplishment.
