So earlier in the year I made a lemon polenta tray bake and it was totes yummy. It got spotted online by some work buddies of mine and I was asked to make it for a meeting in work as a little treat for all the attendees. This was my cue to show off so I thought, "how can I make that lemon polenta cake even better?". Simple, bake two cakes and add a layer of lemon flavored whipped cream to sandwich them both together like a Victoria sponge. I'll call it my lemon Victoria polenta cake if you will!

AMAZING ARMENIAN NUTMEG CAKE
It was with great trepidation that I made this nutmeg cake. Nutmeg can be such an strong spice if it's used too much and I just thought that 2 teaspoons of the stuff in a cake batter would be too overwhelming. I was wrong! The nutmeg flavor becomes muted and you are left with a deliciously spiced sponge which invokes the spirit of Christmas with it gorgeous aroma. A traditional Armenian cake, its a little different as it has a biscuit like crust on the top which is such a good idea as it adds a bit of texture to the bake. It's also incredibly simple to make. NEW HOUSE VICTORIA SPONGE
So we have moved into a new house! Exciting stuff but it does come with some issues such as getting used to a new oven. Baking can be such an exact science so it's very important to get accustomed with the workings of a new oven before working on more challenging bakes. For the first cake of our new home I went back to thee classic bake, the Victoria sponge. I'm pleased to report that our new oven is a gem and the sponges came out great so I spread one with jam and whipped cream before sandwiching them together for a little treat after dinner.Friday, 1 December 2017
KONOBA TAURIS, SIPAN (MATTYB RECOMMENDS)
One day on holiday we decided to take a short ferry ride over to the adjacent island of Sipan to go and have a little wander and check out the sites. After hitting the island and exploring the south side we took the bus over to the westerly port of Luka to hit the beach and enjoy a couple of beers. After a hard days swimming in the crystal clear ocean and sunbathing we headed back round to the port and sat down at Konoba Tauris, looking for a bite to eat.Sunday, 29 October 2017
A RAINY EVENING AT MANDRAC (MATTYB RECOMMENDS)
The weather on Lopud is on the whole, gloriously clear and warm however on our trip to the island this year we unfortunately had one day were the storm clouds did roll over and it rained for near enough one whole day. BRILLIANT CHOCOLATE ORANGE BUNDT CAKE
I love a good old chocolate orange. In fact, I'd go as far as to say it's my favorite flavored chocolate and so to be able to transfer those flavors to a cake to me sounds like heaven. I totally did it with this gorgeous looking chocolate orange bundt cake. A delicious light and fluffy sponge smothered with a glossy chocolate icing all flavored with big juicy fresh orange juice and zest to give it that amazing classic chocolate orange flavour combination that not only tastes yummy but looks divine!

CURIOUSLY DELICIOUS COURGETTE, LEMON AND PISTACHIO TRAY BAKE
Sometimes I see a foodie trend pop up regularly in magazines and on TV which I'm not really quite sure will work. Courgettes being used to make cakes was one of them. I just didn't like the sound of it at all but last weekend I bit the bullet and decided to give it a go as I had been quite curious about how it would taste. I'm so glad I did as it transpired that it would actually taste most delicious especially when flavored with ground pistachio and plenty of zingy lemon both in the cake and the lemon curd icing on top!

ROSEMARY'S CAKE
Who is Rosemary? Well actually she is no one, it just eludes to the fact that this is a cake flavored
with fresh rosemary leaves. See what I did there! Herbs in cakes and desserts have become increasing popular over the years and after I dabbled in a lemon and thyme loaf last year I decided to try and give rosemary a shot in a bake. Well, let me tell you this for certain, it definitely works especially in the rosemary sugar crust sprinkled on top of the cake. Don't be scared people and embrace the herby bakes!

THE RETURN OF THE GUILT FREE CHOCOLATE FUDGE CAKE
This chocolate fudge cake was the first cake recipe I posted on my blog. That was over three years ago now (thank you for everyone who's read the blog over the years!) so when I had some Greek yogurt in my fridge to be used up I thought it was a great time to revisit the recipe and give it another bash. I'm pleased to tell you that it's still the sticky and sweet chocolate based piece of loveliness that I remembered. Plus as it's made with yogurt instead of butter, it has less calories which makes it guilt free! Hooray!

REFUGE MANCHESTER (MATTYB RECOMMENDS)
It's funny how you can walk past somewhere fairly regularly and not even notice it's there. When we travel up to Manchester for concerts and theatre visits we often get off at Oxford Road and we'd never noticed Refuge before. We spied this offshoot of "Volta", a successful Manchester restaurant by chefs Justin Crawford and Luke Cowdrey (also know as the Unabombers - according to their website anyway!) online when planning a birthday meal in the city and we loved the sound of the menu so we decided to give them a try. MINI EGG EASTER BROWNIES
Last year I made a delicious Easter Eggstravaganza Cake that was one of the highlights of my baking year. This year I wanted to celebrate Easter with a new bake and so, ready for the holidays here are my Mini Egg Easter Brownies! A gorgeously gooey, sticky and fudgy brownies with oodles of Cadburys Mini Eggs and Mini Creme Eggs baked into them to basically create a brownie that is perfect for anyone who can't wait to dig into the Easter Eggs on Easter Sunday. It's soooo naughty but oh so nice!

LULLY LEMON SLICES
Classic recipes might not be terribly exciting or have all the bells and whistles of a show stopping celebration cake but for when you want to whip up something easy after a stressful week of work then they are perfect. A favorite of mine is the lemon slice, a simple zesty lemon sponge topped with a layer of even zestier lemon icing. This all in one recipe can be in the oven in less than 15 minutes if you have a handle on your baking skills it's also a great recipe for beginners to try too. Most importantly; its makes some right lully cakes!

LULLY LITTLE CARROT CAKES
Did you know there is a national carrot cake day every year? Well there is and it's on the 3rd of February. Who knew! This year when I spotted this celebration of all things carrot cake was about to swing by I decided to honor the occasion by baking these little carrot cake cupcakes. I filled my cake batter with crunchy pecan nuts and chewy raisins and topped them with a delicious lemon cream cheese frosting. They make the perfect little mouthful to pop in your mouth of a lully afternoon treat!

CHERRY BAKEWELL LOAF CAKE (WITH A KIRSCH KICK)
Anyone who knows me and has been reading my blog over the years will know there is one bake that holds a special place in my heart. The Bakewell! My tart has seen me through a couple of competitions and I love to try and incorporate that classic cherry almond flavor combination into other types of bakes. When I had a tub of glacé cherries in the fridge left over from baking my Christmas cakes I was instantly drawn back to the Bakewell and so began the birth of my Bakewell loaf cake with a grown up twist of a kirsch kick!

NEW YEAR COFFEE AND BISCOFF BUNDT
Happy New Year! Did we all have sore heads yesterday? I was actually alright if a little bit tired. We always have a big family do on New Year's Eve and I always like to take a cake to add to the buffet by way of a thank you to our hosts. This year I took this coffee and walnut bundt cake round which I decorated with a selection of cranberries, almond and coconut which sat upon a scrumptious biscoff flavored frosting. Imagine dunking one of those little biscuits you get in hotels into a cup of coffee and that's the flavor combination you have here!

GROWN UP STICKY TOFFEE BUNDT
This sticky toffee pudding recipe that I've adapted from a Jamie Oliver recipe has become one that I like to crack out on special occasions (Christmas Day for example!). It's a proper showstopper. The gorgeous sticky toffee sponge bundt looks stunning with little golden brown caramel popcorn jewels scattered on top. The best part of the pudding however is that it is laced with a generous helping of amaretto whilst the caramel sauce is spiked with a good helping of Madeira to make it a bake that is most definitely just for the grown ups!

MATTYB'S GREAT BRITISH CHRISTMAS CAKE
It's Christmas Eve ladies and gentleman! You know what that means; it's time to ice your Christmas cake ready for the big day tomorrow. When I said I was preparing my cake in October a couple of guys in work looked at me like I was crazy but if you make your cake early and then soak it with the booze of your choice once a week until the 25th, you'll have a fantastically boozy fruity treat to serve as part of your Christmas spread and if you're anything like us, enough leftover to last till new year! LULLY LEMON DRIZZLE CAKE
So I realized on Sunday just gone that this would be the last weekend of the year we are actually going to be spending at home until the actual Christmas weekend (we are very busy people don't you know!). I couldn't let this weekend pass me by without baking a little something before we head off on our various travels. At the same time, I didn't want to spend all day in the kitchen so for me, there was only one cake to bake; the simply classic lemon drizzle loaf cake! Well as I always say, the oldies are the best aren't they?
