On our second day in Singapore we spent most of the day taking in the sights of Gardens By The Bay, a spectacular garden and conservation hub right in the heart of the city centre. An incredible place in the centre of such a modern city calls for incredible food and so a trip to it's very own hawker centre, Satay By The Bay seemed like a no brainer. A more tourist friendly hawker centre compared to those you'll find in the city, would it's food be able to match the wonders of the attractions and scenery of the gardens?

WARUNG KAMPUNG BALI (MATTYB RECOMMENDS)
One of the first things I love to do when I arrive in a new holiday destination and I've checked into the hotel is to get on my phone and use my GPS to find all the restaurants nearby. There could be some hidden treasures around that you wont find in any guide book or travel guide. That is how I found out about Warung Kampung. A warung is the name for a small family run cafe/restaurant and this little eatery was just around the corner from our hotel. It was getting some nice little reviews on the internet so one night I decided to take a walk and see if I could get myself some good authentic Balinese grub.

QUALITY CORNFLAKE FRIED QUORN NIBLETS
Did you see my Crackin' Cornflake Fried Chicken?
Well obviously I had to go ahead and make a vegetarian version for the
veggie at home and so out came the trusty Quorn chicken pieces. I wasn't
sure that they would work being soaked in buttermilk and then being
deep fried in a herb and spice flavored flour and cornflake coating but
they worked incredibly well. They were just as good as the cornflake
chicken in my opinion and so make a great healthier alternative whilst
also being a new way to make those Quorn pieces more exciting!Saturday, 22 April 2017
CRACKIN' CORNFLAKE FRIED CHICKEN
I think I've finally cracked it when it comes to making the perfect deep fried chicken. With the most delicious meat I've ever eaten on a chicken thanks to it having been in a bath of buttermilk overnight, I bring you my crackin' cornflake fried chicken. Not only does the crispy coating of the chicken taste delicious thanks to the combination of herbs and spices in the flour mix but there is also the best crunch ever to them thanks to the addition of oodles of crushed cornflakes. Perfect weekend comfort food after a long week in work!

"SWEET AS" CORN AND PEA FRITTERS
I love using frozen peas and sweetcorn at dinner time. They taste great and only take a few minutes to cook. One thing that I'm always looking for is new ways to serve up vegetables to make them a bit more interesting and so one weekend I decided to jazz up some frozen peas and sweetcorn by mixing them together in egg based mixture with some fresh spring onion and spicy cayenne pepper. I was surprised at how simple it was to transform them into something incredibly delicious.

BOOZY THAI FRIED HALLOUMI
When you're living with a (mostly) vegetarian person it can be quite difficult sometimes to make meals were you can enjoy a bit of meat whilst being able to make a meat free version to satisfy the veggies as well. You may of seen my recipe recently for Boozy Thai Red Curry Fried Chicken I posted on here earlier in the month but here is a vegetarian version I made using 8 batons of halloumi. It works just as well as my chicken drumstick version and more importantly, is equally as fragrant, spicy and tasty!

BOOZY THAI FRIED CHICKEN
Thai fried chicken is something you may not of come across before and that is because I don't think it exists! This creation came about as I was trying to make some Korean fried chicken but couldn't find any Gochujang paste so I decided to use some red Thai curry paste instead and you know what, it really worked. Add this newly created sauce to some chicken, battered and deep fried in a vodka based batter and you have a proper homemade version of a Saturday night takeaway that's 10 times better than going the chippy!

YARD AND COOP LIVERPOOL (MATTYB RECOMMENDS)
Chicken joints used to be few and far between in Liverpool but over the last few months more and
more venues have been popping up. The latest chick on the block is Yard And Coop. Opening its second venue in England after it's flagship in Manchester, can Yard And Coop really call itself "The Home Of Buttermilk Chicken?" We booked a table to find out for ourselves.

THE EVERYMAN BISTRO LIVERPOOL (MATTYB RECOMMENDS)
A theatre wouldn't be my first point of call when looking for somewhere to eat but when looking for somewhere to eat after going to see a matinee performance of the Everyman Theatre's Company production of Fiddler On The Roof (which was stunning btw!) we saw that they had their very own Everyman Bistro offering up food prior to evening performances. Somewhere to eat right where we were spending the afternoon? Made perfect sense to give them a try and so we made a table reservation and after enjoying the show we headed down into the Everyman's basement to take our seat.Friday, 10 March 2017
CRACKIN' CORNFLAKE CRUSTED MOZZARELLA STICKS
Oh, I do love a good mozzarella stick! Biting through that crispy breadcrumb coating and letting that stringy cheese just dribble all over your chin? Yup, it's totally messy, dirty and wrong but I bet there are a lot of people out there reading this agreeing me right now. One question? How can you make mozzarella sticks even better? Simple! Make your own home made versions and use crushed cornflakes mixed with panko breadcrumbs, garlic and onion powder to make the most delicious, crispy coating ever!

SLIM'S PORK CHOP EXPRESS (MATTYB RECOMMENDS)
Liverpool has a very rich multi cultural heritage but could a restaurant advertising a unique British take on American classics with a sprinkling of dim sum dishes inspired by the neighboring China town be fusion to far? Based right on the top of Seel Street, Slim's Pork Chop Express takes a lot of its influences from the movie "Big Trouble In Little China" with the retro references lining the walls to the names of the dishes on the menu, it really sounds like an 80's child's playground. I went down one Friday to see if it is all a bit gimmicky or a fun and playful place to bring a bunch of mates for chilled out meal.Thursday, 22 December 2016
THE DELAUNAY LONDON (MATTYB RECOMMENDS)
Let me get straight to the point with this one and tell you that I think The Delaunay is a brilliant restaurant. A proper fancy dining experience that we have visited two Christmas times running now as a post theatre treat and hopefully, fingers crossed we'll be back for a third time next year. Let me take the time now to tell you all about why I think The Delaunay is so special and why you need to visit them the next time you are in the capital.Tuesday, 13 September 2016
QUALITY QUINOA COATED QUORN FILLETS
The inspiration for fabulous food ideas coming from My Kitchen Rules Australia this year continues with these delicious quinoa coated Quorn fillets. Now don't be put off by the quinoa, I always thought that I didn't like this stuff either but having given it a second chance I was blown away. By cooking and then toasting the quinoa you get a delicious crunchy toasted nutty type texture and flavor to the crust of these Quorn fillets once they are shallow fried. It's such a great alternative to just frying the fillets in breadcrumbs.

VEGGIE "CROQUETAS DE JAMON" (WITH ADDED PEAS)
Last weekend we decided to get our Spanish on and have a little bit of tapas for dinner. The highlight of this feast were these delicious veggie pea and bacon croquettes. They take a long time to prepare but I'm so glad that I took the time and effort to make them as they were one of the best things I've ever made. A bechamel, pea and veggie bacon filling with a touch of nutmeg encased in a crispy golden brown breadcrumb coating that makes for the perfect finger food for eating outside on a sunny day with a glass of crisp white wine.

QUORN SAUSAGE, BACON AND EGG "MAT"MUFFIN
Having cooked vegetarian food regularly for at least ten years now it's always great when I see a new meat substitute product come onto the market. Quorn's latest offering is a sausage patty that instantly reminded me the type you get in a certain fast food chains breakfast muffins. I couldn't wait to try and recreate them using this exciting new product alongside the already popular veggie bacon strips and the humble egg. Cook them and pop them all on a toasted muffin and you have a scrummy vegetarian breakfast treat

RED HOT BUFFALO CHICKEN DRUMSTICKS
If I had to eat one type of meat for the rest of my life it would have to be chicken. It's my go too meaty treat (particularly when I'm a bit worse of wear after a night on the cider!). It's so versatile and can be turned into many a delicious dish, such as these finger licking buffalo chicken drumsticks. These chicken drumsticks are coated in some seasoned flour and then deep fried so that they are super crispy before getting tossed around in a buffalo sauce which can be as spicy as you like (although for me, the hotter the better!).

ROOKWOOD BAR AND 'CUE LIVERPOOL (MATTYB RECOMMENDS)
There are many new ventures in Liverpool claiming to offer great authentic BBQ food but not many of them are offering this for £15 for two courses with a bottle of beer! At the time of writing, this is what Rookwood Bar and 'Cue currently have on offer for midweek diners and with such an enticing offer on the table it was a bit of no brainer that we would have to go and try it out!

SPICY SALT AND SZECHAUN PEPPER TOFU
Tofu has always been a bit hit and miss for me. I get nervous if I order it when I'm out and about as when it's poorly cooked it can be awfully chewy and nasty. When done right though it can be a delicious vegetarian treat. As I have fallen back in love with the flavors Szechaun peppercorns again I decided to use them to create this yummy salt and pepper tofu. Like my Szechaun stir fry from an earlier post, it is quite the spicy but if you don't mind a bit of a kick to your food then this is definitely one to try!Saturday, 9 January 2016
"NEW YEAR NEW ME" BREAKFAST PANCAKES
I've never been one to eat breakfast, but with my "new year, new me" attitude I've started to try and get on board with what is often declared as the most important meal of the day. To do this, I've been looking for more interesting breakfast ideas to try and make it more exciting. This is how I came to make these banana and flax seed pancakes. Super quick and simple to make, it turns boring porridge oats into something that's worth getting up in the morning for. There aren't many ingredients to really talk about here. It's bananas, eggs, oats and some flax seeds. Flax seeds can be picked up in lots of large supermarkets now due to their increasing popularity but my tip if your in the UK is to keep an eye on Holland and Barrett's penny sale as I got mine from there at a bargain price.

GARLIC, ONION AND PARSLEY TATER CAKES
Is there anything in the world that is more comforting than a good old potato product? Potato waffles, crispy roast potatoes, they are all absolute favorites in our house. Another favorite is anything that you can deep fry! Onion bhaji's, falafel, it begs the question "What would happen if you deep fried potatoes." Well quite simply it creates these amazing potato cakes that are the most fabulous little weekend treat to give you a little bit of hug on the inside when you've had a hard week in school or work.
