We loved our nut roast when we made it a couple of Christmases ago but then we neglected it! This year however we resurrected this old favorite and it was still as good as we remembered. So much better than a shop bought nut roast, this mixture of herb and garlic mushrooms and nuts is bound together with rice and cottage cheese to make a beautifully plump and moist roast that is perfect not just for Christmas but for the whole year. It’s even got a good glug of wine in it for good luck. Who could resist that?

THE RETURN OF OUR PERFECT NUT ROAST

KONOBA TAURIS, SIPAN (MATTYB RECOMMENDS)
One day on holiday we decided to take a short ferry ride over to the adjacent island of Sipan to go and have a little wander and check out the sites. After hitting the island and exploring the south side we took the bus over to the westerly port of Luka to hit the beach and enjoy a couple of beers. After a long month of difficult times coupled with holidaying in Croatia as well as moving into a brand new home I am finally back ready to share some of my latest dining experiences and some brand new recipes. What better way to start this next chapter than with a return to an old friend. Last year we visited Mandrac on Lopud and instantly fell in love with the amazing setting, friendly laid back staff and most importantly, the incredible food. "BISCUIT AND BOOZE" "FRUIT AND NUT" NO BAKE CHOCOLATE BARS
Sometimes you need a recipe for a sweet treat that is quick and simple to make when you have a last minute gift making emergency. When I decided to make something as a thank you present for the superstars at my dad's care home which he was leaving this week I needed something that I could rustle up quickly after work ready to take the next day. These no bake chocolate bars were the answer to my prayers. They contain all my favorite things; ginger nut biscuits, chopped pecans and best of all, booze soaked dried fruit. Brilliant!

TREDWELLS LONDON (MATTYB RECOMMENDS)
Having visited the Gilbert Scott at London St Pancreas before this blog was born and really enjoying it we were glad to see that chef owner Marcus Wareing also looked after Tredwells near to the Cambridge theatre. Close to the Seven Dials which we were visiting to see a show, we took a look at the menu and we were instantly sold so we booked a table and headed down one Friday evening to go check it out.

WARUNG KAMPUNG BALI (MATTYB RECOMMENDS)
One of the first things I love to do when I arrive in a new holiday destination and I've checked into the hotel is to get on my phone and use my GPS to find all the restaurants nearby. There could be some hidden treasures around that you wont find in any guide book or travel guide. That is how I found out about Warung Kampung. A warung is the name for a small family run cafe/restaurant and this little eatery was just around the corner from our hotel. It was getting some nice little reviews on the internet so one night I decided to take a walk and see if I could get myself some good authentic Balinese grub.

AZUL BALI (MATTYB RECOMMENDS)
I initially didn't want to go into the Azul Tiki Bar when we first passed it the previous day whilst walking along the beach in Legian, Bali. I don't know why but maybe I just thought that by having the mantle of being the island's first tiki bar that it was just going to be a bit cheap and nasty. I gave the menu another look the next day though and decided to give them a whirl. Well, they did have barramundi on the menu (which I've always wanted to try!) and there were cocktails ahoy so even if it was bad I could get bladdered on those. S.K.A.I BEACH CLUB BALI (MATTYB RECOMMENDS)
Our Bali adventure continued on day two with drinks on the beach during sun downers. I can't think of any better way to finish off a hard day of sun bathing by the pool. How about if there was a yummy meal to be had too? With hungry bellies we headed off down the strip and stumbled upon the SKAI Beach Club. This restaurant is part of the Padman Resort in Legian but we didn't let the fact it's attached to a hotel put us off giving it a try as the menu looked delicious!

HOLY GUACAMOLE BAR AND GRILL BALI (MATTYB RECOMMENDS)
So at the beginning of this month I was very lucky to go for two weeks holiday exploring Bali and Singapore. I love Asian food in all its forms so I couldn't wait to try all the delights of these two regions. You might be surprised to see then that for our first meal away we actually ended up in Holy Guacamole, a Mexican bar and grill near our hotel in Legian. BOOZY THAI FRIED HALLOUMI
When you're living with a (mostly) vegetarian person it can be quite difficult sometimes to make meals were you can enjoy a bit of meat whilst being able to make a meat free version to satisfy the veggies as well. You may of seen my recipe recently for Boozy Thai Red Curry Fried Chicken I posted on here earlier in the month but here is a vegetarian version I made using 8 batons of halloumi. It works just as well as my chicken drumstick version and more importantly, is equally as fragrant, spicy and tasty!

BOOZY THAI FRIED CHICKEN
Thai fried chicken is something you may not of come across before and that is because I don't think it exists! This creation came about as I was trying to make some Korean fried chicken but couldn't find any Gochujang paste so I decided to use some red Thai curry paste instead and you know what, it really worked. Add this newly created sauce to some chicken, battered and deep fried in a vodka based batter and you have a proper homemade version of a Saturday night takeaway that's 10 times better than going the chippy!

BOOZY BBQ BEER CAN BIRD
Beer can chicken is not something I have invented but it's certainly a craze that has been going around on the foodie scene for a while now that I hadn't tried yet. I tried it this weekend just gone for the first time and I'm so glad that I did because it's absolutely phenomenal. I mean what could go be wrong with the combination of beer and chicken? Add to this boozy bird a lully BBQ butter rub made with paprika and cayenne pepper and applied to the skin before roasting and you are in for the best Sunday roast of your life.

GUSTO LIVERPOOL (MATTYB RECOMMENDS)
Gusto in Liverpool has been around for a few years now so this isn't the first time I've walked through their doors and I'm sure many scousers could say the same. It's in such a handy location for people heading off to the arena or for those you have taken a leisurely stroll around the docks for the day. I've never had a bad meal in Gusto but the food has been better on some occasions then it has been on others. As part of a large booking, we traveled down to the waterfront one Sunday afternoon to see this visit has going to be one of those better trips or if we were going to leave still wanting more.Saturday, 4 February 2017
MATTY B'S AMARETTO BAKEWELL TART
The time has come for me to update my recipe for my my signature bake! My Bakewell tart! This tart is one of the reasons I started writing this blog as people kept asking me for the recipe! It has the crumbliest almond flavored pastry, an Amaretto frangipagne and toasted almonds on top. The addition of the Amaretto adds a beautifully sharp boozy almond taste to the tart that makes it defiantly one for the grown ups.

MATTY'S CRACKIN' CRANACHAN
Burn's night happened last month (as it does every year of course!) and this year I was inspired to rustle up a dish to honor this annual celebration. Scouring the internet I came across a pudding known as a Cranachan. This traditional Scottish dessert consists of crumbled up honey roasted oats, fresh raspberries and oodles of whipped whiskey cream. Well, I knew that was the dish I had to make, it just sounded so decedent and naughty. Without wanting to face the wrath of the Scots, I've added my own little twist by adding some seeds to the oats and a mixed fruit medley to the base. I think it's proper bonnie like! BOOZY CHOCOLATE AND RAISIN NO FUSS FUDGE
This is the perfect recipe for any chocolate lovers out there who want to make a little treat for themselves but without having to do too much hard work. This boozy fudge can be whipped up easily by soaking some raisins in some Amaretto, melting some chocolate and mixing everything together with some condensed milk. Transfer everything to baking tin and then pop the mixture in the fridge for a few hours and let the magic just happen. That is basically it! Doesn't get much simpler than that does it?

SUPER SLOW COOKED VEGGIE SAUSAGES AND LENTILS
So it's now mid January, it's raining everyday and it's just too grim to step outside the house. What you need is a bit of comfort food to cheer you up and this is where my slow cooker veggie sausage and green lentil dish comes in. The best part about this recipe is that it takes minimal effort to prepare and then you simply have to let your slow cooker do all the work for you. As with all slow cooked meals though, that low and slow cooking just ramps up the flavor to create something truly scrumptious to get you through these winter months.

CHERRY BAKEWELL LOAF CAKE (WITH A KIRSCH KICK)
Anyone who knows me and has been reading my blog over the years will know there is one bake that holds a special place in my heart. The Bakewell! My tart has seen me through a couple of competitions and I love to try and incorporate that classic cherry almond flavor combination into other types of bakes. When I had a tub of glacé cherries in the fridge left over from baking my Christmas cakes I was instantly drawn back to the Bakewell and so began the birth of my Bakewell loaf cake with a grown up twist of a kirsch kick!

GROWN UP STICKY TOFFEE BUNDT
This sticky toffee pudding recipe that I've adapted from a Jamie Oliver recipe has become one that I like to crack out on special occasions (Christmas Day for example!). It's a proper showstopper. The gorgeous sticky toffee sponge bundt looks stunning with little golden brown caramel popcorn jewels scattered on top. The best part of the pudding however is that it is laced with a generous helping of amaretto whilst the caramel sauce is spiked with a good helping of Madeira to make it a bake that is most definitely just for the grown ups!

MATTYB'S GREAT BRITISH CHRISTMAS CAKE
It's Christmas Eve ladies and gentleman! You know what that means; it's time to ice your Christmas cake ready for the big day tomorrow. When I said I was preparing my cake in October a couple of guys in work looked at me like I was crazy but if you make your cake early and then soak it with the booze of your choice once a week until the 25th, you'll have a fantastically boozy fruity treat to serve as part of your Christmas spread and if you're anything like us, enough leftover to last till new year! Marzipan, icing and apricot jam at the ready? Lets go!
