JON'S TOFFEE "APPLE-BERRY" CRUMBLE



There are some great berries in season at the moment and we are always told that we should eat the seasons. The problem I have is that I'm not a fan of raw fruit so I can only stomach fruit when it's bake. Jon knows this so when we had some fruit in the kitchen about to turn he did the best thing possible and made this beautifully sticky and sweet crumble which I call Toffee "Apple-Berry" flavor. Its so quick to make, uses up all your fresh berries and is so quick to make. Whats not to like?




Toffee "Apple-Berry" Crumble

For The Filling

4 Large Apples (Peeled, Cored
125g Butter
125 g Dark Brown Sugar
Zest And Juice Of 1 Orange
 400g Berries Of Your Choice (Cut To Same Size As Apples)

For The Topping

100g Plain Flour
100g Butter (Cold And Cut Into Cubes)
100g Porridge Oats
100g Demerera Sugar
  1. Turn up your oven to 180 degrees (160 fan)
  2. Place the apples,butter,sugar,orange zest and juice in a saucepan and warm on a medium heat for five minutes before adding in the berries and continue to heat until the apples begin to go soft. Pour the mix into a baking dish and leave to one side.
  3. Begin the topping by placing the flour and butter into a newbowl and rub the butter into the flour with your cool fingertips until it resembles breadcrumbs. Tip in the oats and sugar and mix everything together until well combined.
  4. Sprinkle the topping over the warm fruit mixture and place in the oven for around 25-30 minutes until the topping is golden brown and bubbling on top of the warm filling.
You can serve with cream or custard if you like but I love it served with a big dollop of ice cream. The warm crumble will slow melt the ice cream and mix in with the toffee sauce which is just absolutely divine.

Of course you can switch the fruit up to what ever is in season or feel free to use pears if you have them to hand instead of apples. It's such a versatile pud.
