
Posh Potato Salad
400g Washed New Potatoes
1 Small Finely Diced Red Onion
2 Tbsp Red Wine Vinegar
2 Tbsp Mayonnaise
1 Tbsp Mixed Italian Herbs
1 Tbsp Golden Caster Sugar
Salt and Pepper To Season
- Place the potatoes in a pan of salted boiling water and bring back to the boil for around 15 minutes until the potatoes are just cooked. They should be soft enough to glide a knife through but still be firm.
- Whilst the potatoes are boiling, place the onion, vinegar, Mayonnaise, herbs and sugar in a bowl and give everything a good mix until a smooth dressing is formed. Season this with some salt and pepper.
- Once the potatoes are boiled, drain and then leave them to cool until you can handle them. Chop each potato in half and chuck into a bowl big enough to hold them all.
- Add the dressing a spoonful at a time, mixing after each addition until you have coated all the potatoes.

...And there you have it. Lovely and sweet it great to serve as a side for a salad or maybe even a slice of quiche. If you find it to too sweet then maybe try my chili mustard potato medley instead which packs a warmer punch. Either way you now have delectable potato salads to suit a variety of palettes.
