"EPICURED INSPIRED" AVOCADO, MARMITE AND FETA BRUNCH



If you take a look at my review of Epicured Liverpool you will of seen this delight of charred bread spread with marmite and topped with deliciously seasoned avocado and sprinkled with salty feta. I strongly suggest you take a lunch time out to go and try it out. If you are not lucky enough to be in our fine city then here is my attempt to recreate this slice of heaven. I imagine it's something a little bit different that you may not of experienced before but once you try it, it's an experience you will want to repeat over and over again.

 
 Just two things to mention before we start. Firstly, the better the quality of your bread, the more delicious your lunch will be. Try and take the time to hunt out a nice freshly made bloomer from your local bakehouse or supermarket bakery and spend that little bit extra to really make this lunch something extra special. Same goes for your feta as well. 

Secondly, people can be divided over the texture of their avocado. Some prefer it smooth and some would rather it had a bit of chunkiness. For this recipe I would really suggest you leave a bit of chunk for texture however it really is up too you. Experiment with the overall texture and amounts of the ingredients in this dish until you find the perfect combination for you. My recipe below is how I like it and is enough when to make two portions for a big lunch for one or a light lunch for two.

Avocado, Feta and Marmite Toast


2 Thin Slices Of Bloomer Bread
2 Tsp Marmite
1 Avocado 
Juice Of Half A Lime
Salt And Pepper To Season
100g Feta

  1. Take your bloomer bread slices and grill until toasted to your preference. Spread the marmite thinly over each slice and leave to one side.
  2. Take the avocado, half it, remove the stone and scoop the flesh out into a bowl. Squeeze over the juice and add in the salt and pepper and delicately smash until just combined. Taste and add more lime juice or seasoning to your taste.
  3. Spread the avocado mix over the marmite toast before crumbling over the feta cheese.


It's as simple as that but the taste is really something special. When you take a mouthful make you get a little bit of everything on your fork. It's the combined flavors and textures of the avocado, feta and marmite that really work so well together that you'll be making tonnes of the stuff. It's also relatively good for you and makes a great weekend lunch to treat yourself too if you are on a health kick.
