
Don't think you have to stick with sunflower and flax seeds though. If you don't have any of those to hand then you can chuck in some other seeds instead if you have them. Poppy seeds, chia and toasted pumpkin seeds would all work a treat in this banana bread. Once again with my previous banana bread bonanza posts, this recipe will make
enough for two 1lb loaf tin. Thats one to eat straight away and one to
freeze and save for later.
Superfood Seeds Banana Bread
200g Mashed Banana
2 Tbsp Semi Skimmed Milk
100g Softened Butter
150g Plain Flour
150g Golden Caster Sugar
100g Softened Butter

1 Tsp Bicarbonate of Soda
1 Tsp Baking Powder
2 Whole Eggs
3 Tbsp Sunflower Seeds
2 Whole Eggs
3 Tbsp Sunflower Seeds
2 Tbsp Flax-seeds
- Start by getting your oven toasty warm to 180 degrees (160 fan) and grease and line two 1lb loaf tins.
- Chuck the banana, milk, butter, flour, sugar, bicarb, baking powder and eggs into a large bowl and give everything a good beat until smooth and well combined. Add in the sunflower and flax-seeds and fold through until just evenly distributed.
- Divide the mixture between the two prepared loaf tins and place in the centre of your oven to bake for 40-45 minutes until golden brown and an inserted skewer comes out clean.
