MATTYB'S BANANA BREAD BONANZA PART 4: SUPERFOOD SEEDS




This recipe brings my banana bread bonanza to a close with a forth version of my favorite bake which is packed full of delicious sunflower and flax-seed. Sometimes referred to as superfoods, those crunchy little nuggets of goodness will have you saying "well it's OK for me to have a slice of this, its full of superfood goodness". Well that what I kept telling myself when I dived into a slice or two of this over the last weekend. Well when cake is as quick, simple and delicious to make as this then it would be criminal not too!

Don't think you have to stick with sunflower and flax seeds though. If you don't have any of those to hand then you can chuck in some other seeds instead if you have them. Poppy seeds, chia and toasted pumpkin seeds would all work a treat in this banana bread. Once again with my previous banana bread bonanza posts, this recipe will make enough for two 1lb loaf tin. Thats one to eat straight away and one to freeze and save for later. 


Superfood Seeds Banana Bread

200g Mashed Banana
2 Tbsp Semi Skimmed Milk
100g Softened Butter
150g Plain Flour
150g Golden Caster Sugar
1 Tsp Bicarbonate of Soda
1 Tsp Baking Powder
2 Whole Eggs
3 Tbsp Sunflower Seeds
2 Tbsp Flax-seeds
  1. Start by getting your oven toasty warm to 180 degrees (160 fan) and grease and line two 1lb loaf tins.
  2. Chuck the banana, milk, butter, flour, sugar, bicarb, baking powder and eggs into a large bowl and give everything a good beat until smooth and well combined. Add in the sunflower and flax-seeds and fold through until just evenly distributed.
  3. Divide the mixture between the two prepared loaf tins and place in the centre of your oven to bake for 40-45 minutes until golden brown and an inserted skewer comes out clean.
Remove the two loaves from the oven and leave them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. If you like, you can drizzle over some runny honey before sprinkling any left over sunflower or flax-seeds on top to add a final flourish to your banana bread. When you get a little mouthful of those crunchy seeds you will be reminded that this banana bread is full of good stuff which gives you the perfect excuse to cut off another slice and enjoy that as well alongside your obligatory mug of tea. It doesn't get more super than my seed filled superfood banana bread.
