GREEKY GREENS



Springtime is here and that's the best time to start buying your in season asparagus. It's one of my favourite veg. A lot of people will tell you to grill them and then sprinkle with Parmesan or wrap them in bacon or prosciutto but here I've come up with a fresh green vegetable salad which combines yummy asparagus, more green veg and salty feta to create a tasty side dish will zoosh up any evening meal!

 GREEKY GREENS

1 Finely Diced And Deseeded Red Chili
1 Finely Diced And Deseeded Green Chili
1 Tbsp Sesame Seeds
1 Tbsp Lemon Juice
3 Large Sprigs Of Asparagus
50g Frozen Peas
1 Courgette, Sliced Into 1cm Thick Pieces
50g Feta
Salt And Pepper To Season


  1. In a small oiled frying pan on a high heat, toss in the chili's and sesame seeds with the lemon juice and flash fry for around two minutes until the seeds start to toast. Take off the heat and tip into a heat proof bowl
  2. Place the asparagus in a pan of boiling water and blanch for 2 minutes. Remove the asparagus and dunk into a bowl of cold water to stop the cooking process.
  3. Use the same pan of boiling water to cook through the peas for around 3 minutes until just cooked. Once done, drain and tip into the bowl of cold water with the asparagus.
  4. In a lightly oiled griddle pan on a high heat, grill your sliced courgette pieces for around 4 minutes before adding to the chili and sesame seed mix.
  5. Take your asparagus and slice along the length of the stalks to halfthem and then chop along the width three times and lay in the griddle pan sliced half down as in the picture to the right. Griddle for around 4 minutes before adding to the bowl with the courgette.
  6. Quickly sprinkle over the feta cheese and give everything a mix. The heat from the grilled asparagus should start melting the feta and coat all the greens.

Serve with a steak or even your luscious lasagne, it goes fab with a variety of main meals and is great for using up any green veg that is lying around your kitchen.

Makes a great side for a BBQ too. Double up the quantities and make a large bowl along with my chili potato medley and you'll have an array of tasty treats to serve along your burgers and dogs
